Air Fryer Zucchini Boats

Ingredients

  • 2 medium zucchinis, slice lengthwise, scoop out center flesh and save
  • 2 T. nsa butter
  • 1 c. panko breadcrumbs, unseasoned
  • 1/2 t. onion powder
  • 1/2 t. garlic powder
  • 3/4 c. pasta sauce
  • 2 oz.mozzarella cheese, shredded or use fresh mozzarella
  • Fresh basil, chopped

Directions:

In a saute pan, saute the chopped zucchini centers in the butter. Add the panko, onion powder and garlic powder and saute until light brown.

In a large sauce pan, add about 2 inches of water. Boil water and add the 4 pieces of zucchini and allow to boil for about 5 minutes until tender. Remove and drain.

Fill the zucchini boats with the mixture that was just cooked.

Top that mixture with the pasta sauce, and then sprinkle 1/2 oz of cheese on each boat.

In your preheated air fryer, add the zucchinis, and cook at 390 degrees for 4-5 minutes til lightly browned.

Top with fresh basil, if desired
