Yield 2 racks of ribs about 6-1/2 to 7-1/2 lbs of ribs- the meatier the better

Remove the skin on the bone side

Brush on Chinatown Soy Sauce – 1/4 cup for 2 racks

Sprinkle on generously a rub that consists of :

  • 1/4 cup oregano knocked down fine
  • 2 tbsp onion powder– I use half plain and half toasted
  • 2 tsp garlic

Marinate overnight

Smoke or grill 2 hrs at 220 degrees

Place in a pan, add lemon-lime soda half way up ribs and cover with foil another 2 hrs.

Dump this solution as it caramelizes the sugars from the pop.

Now the fun part– mix a mop from Mitch’s BBQ Sauce with bourbon cherry flavor– 1/4 cup of it

Brush on will –make enough for 3 times that amount
Heat another 10 minutes and serve
