Asian Sesame Pasta Salad

Ingredients

  • ¼ cup sesame seeds.
  • 1 (16oz box of bow tie pasta or your favorite)
  • ½ cup vegetable oil
  • 1/3 cup homemade soy sauce or Chinatown Low Sodium Soy Sauce
  • 1/3 cup rice vinegar
  • 1 teaspoon sesame oil
  • 3 tablespoons of sugar
  • ½ teaspoon of ground ginger
  • ¼ teaspoon black pepper
  • 1/2 cup chopped green bell pepper
  • 1/3 cup chopped fresh cilantro(optional)
  • 1/3 cup chopped green onions

Directions

Heat skillet over medium-high heat. Add sesame seeds, and cook stirring frequently until lightly toasted. (they will start to turn darker color) Remove from pan and set aside.

Bring a pot of water to a boil add pasta and cook al dente. (8-10 minutes)

Drain and rinse under cold water until cool. Transfer to a large bowl.

In a jar with a tight fitting lid (mason jar works). Combine oil, soy sauce, vinegar, sesame oil, sugar, sesame seeds, ginger, and pepper. Shake well

Pour over pasta and toss to coat evenly. Gently mix in the cilantro, bell pepper, and green onions.

(You can also add cooked chicken breast to this)
