Ingredients

  • 1 large egg
  • 2 tablespoons canola oil
  • 1 1/2 cups unsweetened applesauce
  • 2 cups all purpose flour
  • 2 ¾ teaspoons Featherweight no sodium baking powder
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cinnamon
  • 3/4 cup raisins

Directions

1. Pre-heat oven to 375°

2. Beat together egg, oil, and applesauce.

3. Add flour, baking powder and spices; beat well.

4. Stir in raisins.

5. Spoon batter into greased muffin pan.

6. Bake at 375° for 20- 25 minutes or until firm and fully browned.

7. Cool on a wire rack.
