Ingredients

  • 4-5 large baking potatoes- cooked, cooled, peeled and diced (about 30 oz)
  • 2/3 cup unsalted butter
  • 2/3 cup all purpose flour
  • 1/4 tsp white pepper
  • 6 cups milk
  • 1 cup sour cream
  • 1 bunch of green onion-use green part only
  • 4 oz Trader Joe’s shredded Swiss & Gruyere cheese (optional)
  • 2 strips sodium reduced bacon-cooked crisp & chopped for garnish(optional)

Directions

In a large pan, melt butter, stir in flour and pepper until smooth.

Gradually add milk and whisk until becomes thick-takes a few minutes. Remove from heat.

Whisk in sour cream. Stir in potatoes and green onions.

You can add in cheese or serve in bowls and garnish with cheese and bacon.

Makes 8 servings, each serving has 447 calories and 98mg sodium. Calories and sodium will be higher if you add the optional cheese and bacon.

  1. If you want to go even more sodium free, replace the bacon with sliced pork belly. Cook up the pork belly in oil until it’s crisp like bacon. Season it up with some no-salt seasoning of your choice.
