In a large bowl combine these ingredients

  • 1 can drained chick peas
  • 1 cooked yam (microwave is easiest)
  • Cooled quinoa (3/4 cup cooked as stated in directions on package)
  • Juice of 1/2 lemon
  • 3 T low sodium prepared mustard
  • 5 cloves minced garlic
  • 1/2 bunch chopped cilantro
  • Pepper
  • Cheyenne ( Cayenne) pepper to taste

Directions

Mix as you would meatloaf. I just use my hands. Add dry unseasoned bread crumbs until mixture holds together.

Make into patties and fry in olive oil in non stick pan.

This will make enough patties to freeze some for a couple of meals. Just fry them all up and freeze in Ziploc bags.
