Spicy Southwest Beef and Peppers Over Beefy Rice

Ingredients

  • 1 sweet red pepper, sliced
  • 1 small sweet onion, cut in thin wedges
  • 4 cloves roasted garlic, diced
  • 1 Hatch chili, grilled, chopped
  • 1 large tomato, diced
  • 8 oz cooked and shredded beef (leftover pot roast is great)
  • 1 can Original Rotel, no salt 1
  • 8 oz can no salt tomato sauce
  • 1/8 t. Mrs Dash No Salt Southwest Chipotle ( Optional- if you don’t want very spicy beef, leave this out)

Directions

Add oil to a hot pan and sauté the red pepper and onion in pan until slightly cooked.

Add garlic and sauté 2 minutes more.

Add the Hatch chili, tomato and beef to the pan. Stir.

Now add Rotel, tomato sauce and Mrs Dash seasoning ( if you are using it).

Cover and simmer 30 minutes.

Serve over rice.

Beefy Rice

2 2/3 c. water

4 t. Herb Ox No Salt Beef Bouillon

1 1/3 c. rice

Stir, rice, water and bullion in pot. Cover pot and boil, reduce heat and cook for about 20 minutes.

Place rice on plate and top with beef.
