Potato Beef Casserole

Directions

Saute-1/4 sweet onion, diced ( saute for a few minutes) and then add 8 ozs. ground beef and finish cooking beef while chopping into small pieces.

Set aside in small bowl slice 5-6 small potatoes. Cook in water for 10 minutes- don’t let them fall apart

Place cooked potatoes in 8 x8 baking dish sprayed with Pam.

Using the same pan from the beef, heat 2 T. no salt butter, and add 2 T. flour, whisking to mix.

Add 1 c. milk and whisk and let thicken a bit. Now add in 1 c. grated cheddar cheese and whisk til mixed.

Be sure to taste- I had to add about 8 shakes of Mrs. Dash’s Southwest Chipotle No Salt Seasoning to give it some kick.

Spoon the beef mixture into the cheese sauce and mix.

Pour over the potatoes in the baking dish.

Bake for 25 minutes or so at 350 degrees.
