2 1/2 cups
- 5 or 6 large peaches, peeled, or canned, sliced
- 1/2 c. raisins
- 1/3 c. raspberry or cider vinegar
- 3/4 c. brown sugar
- 1 T. ground ginger
- 2 scallions, chopped
- 1 t. dry mustard
- 1 T. grated orange peel
- 1/2 t. red pepper flakes
- 4 or 5 whole cloves
- 1 cinnamon stick
- 1/2 c. water
In a large saucepan, combine all ingredients
Simmer covered for 30 to 35 mins, stir often, until desired consistency.
Serve immediately, or store in covered container in fridge for several months.
Use as a condiment on your plate or on chicken or beef burgers or with pork, etc.
