Ingredients

  • 3 oz (85g), Organic Crimini Mushrooms
  • 0.50 onion, Onions, sweet, raw
  • 3 oz, Frozen Shredded Hash Browns
  • 1 Egg White, Large Brown
  • 1 slice, Lower Sodium Bacon

Directions

Crisped up bacon, added onion and caramelized, added mushrooms and potatoes to cook down and brown. Made a well in the mixture and added egg, covered to cook egg.

Sprinkled with a little Parmesan cheese (In the picture the egg shows an egg yolk; next time no yolk, it added too much fat)
