Low Sodium Layered Potato Casserole

Ingredients

  • 2 tbsp olive oil
  • 1 onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 lb lean ground beef
  • 1 tbsp Hungarian paprika
  • 5 medium sized potatoes, peeled, thinly sliced
  • 21 Salute no sodium seasoning (from Trader Joe’s)
  • Ground black pepper
  • 2 1/2 cups milk
  • 3 eggs

Directions

1. Preheat oven to 375°. Spray a 9×13 inch baking dish with cooking spray.

2. Heat olive oil in heavy skillet and add onion and garlic. Cook, stirring frequently, until translucent. Add ground beef and paprika, cook until beef is browned. Remove from heat and set aside.

3. Layer half of the sliced potatoes in the bottom of the prepared baking dish and sprinkle with a small amount of 21 Salute and pepper. Top the potatoes with the ground beef.

4. Layer remaining potatoes over beef, and sprinkle with 21 Salute and pepper.

5. Whisk together the milk and eggs until fully combined. Pour the mixture into dish to cover potatoes; cover with foil. Bake for 45 minutes, or until potatoes are tender when pierced with a fork.

6. Remove foil and continue to bake until top is brown and bubbly, 25 to 30 minutes.
