Low Sodium Beef Barley Soup

Ingredients

  • 1 pound round steak
  • 6 cups water
  • 1 cup barley
  • 1 cup onion, chopped
  • 1 cup celery, chopped
  • 1 medium carrot, chopped
  • 1 cup lima beans
  • 1 cup corn (fresh, frozen or canned without salt)
  • 1 clove garlic, minced
  • 1/4 tsp pepper
  • 1/2 cup parsley, fresh, minced or 1 tbsp dried (optional)

Directions

1. Cut the beef into small cubes

2. Put into a soup pot with 6 cups cold water*

3. Bring to a boil, skimming off any foam

4. When no more foam rises, add the rest of the ingredients

5. Bring back to the boil

6. Reduce heat and simmer until barley is cooked.

7. Taste and adjust the seasoning

8. Divide into 6 portions…to reduce calories and sodium, divide into 8 portions

Makes 6-8 servings
1/6 or recipe has 339 calories, 83mg sodium
*if you like a stronger, ‘beefier’ flavor add some low sodium beef broth or Beef Herb-Ox
