Ingredients

  • 1/4 cup olive oil
  • 3 large cloves garlic, chopped
  • 1 tsp dried rosemary*
  • 1 tsp dried thyme*
  • 1 tsp dried oregano*
  • 2 lemons, juiced
  • 4 chicken drumsticks

Directions

1. Put all the ingredients, except chicken, into a large zipper bag and mix well. Add the chicken drumsticks to the marinade, mix well and marinate in the refrigerator 8 hours or preferably overnight.

2. Preheat oven to 400°

3. Line a cake pan with aluminum foil and place a rack into the cake pan. Lightly spray the rack and foil with oil.

4. Remove chicken from the marinade and discard the marinade.

5. Place the drumsticks on the oiled rack and cook for about 30-35 minutes or until pieces are cooked through and there is no pinkness around the bone.

6. Each person gets 2 drumsticks.

*if you like a stronger Greek flavor increase the amount of dried herbs to your liking.

Thighs could be used instead of drumsticks.
