Cauliflower Patties

Ingredients

  • 1 small cauliflower, ground in food processor to make 1 1/2 c.
  • 6 T. flour
  • 1 egg
  • 1/2 onion, diced
  • 1 t. dried basil
  • 1 t. dried oregano
  • 1 t. dried parsley
  • 3/4 t. paprika
  • 3/4 t. garlic powder
  • 1 t. no salt added baking powder
  • freshly ground black pepper

Directions:

Mix all in a big bowl. Heat 2 T. oil in a fry pan on medium high.. Using a 2 T. scoop, scoop up the mixture, Place in hot pan, press down with small spatula or silicon scraper.

Cook about 4 minutes on each side. Remove and cook more patties. You may need to add a bit more oil.

Yields about 16 patties.

Garnish with dried parsley if desired

Can be served plain or with low sodium Ranch dressing or creamy Italian dressing.
