This is like a big, soft oatmeal cookie that is in the shape of a pizza and tastes a bit like banana bread. I think other fruit could be used in this as well but the banana is used in this to replace oil that would have been used otherwise. Next time, I’ll add in a few raisins or dried cranberries.

Ingredients

  • 1 tbsp granulated white sugar
  • 1 tsp vanilla extract
  • 1 large egg
  • 1 cup oatmeal
  • 1 medium, ripe banana
  • 1 cup milk (I used 1%)

Directions

1. Preheat oven to 375°F

2. Spray an oven skillet with cooking spray.

3. In a mixing bowl place the sugar, vanilla and egg and mix well until creamy.

4. Add in oatmeal and mix until well blended.

5. Break the banana into several pieces and put it into the oatmeal mixture and mash and mix well with a fork.

6. When it is well blended add in the cup of milk, mix and let it all sit for a few minutes for the oatmeal to absorb some of the milk.

7. Dump the contents of the bowl into the prepared oven skillet, making sure its all of uniform thickness.

8. Bake in 375 oven for 25-30 minutes or until set, a bit brown around the outer edges and no longer liquidy in the center.

9. Let sit for a few minutes and cut into 8 triangles. Eat as is or put on a plate and drizzle a little syrup over it.

Total recipe has 625 calories and 178mg sodium.
Each triangle has 78 calories and 22.25mg sodium
