If you are using boneless, skinless chicken breasts, reduce the initial baking time to 20 minutes, then top with mozzarella and bake an additional 10 minutes, for a total of 30 minutes.

Ingredients

  • 3 large bone-in, skinless chicken breasts
  • 3 tsp Mrs. Dash Garlic and Herb Seasoning
  • 3 tsp Mrs. Dash Tomato and Basil Seasoning
  • 2-8 oz cans no salt added tomato sauce
  • 1 can No Salt Added Rotel
  • 1 cup shredded mozzarella cheese (more or less, if desired)

Directions

Preheat oven to 375ºF.

Spray the bottom of a large cooking dish with a cover with cooking oil.

Wash the chicken and remove skin, then place in cooking dish.

Sprinkle the spices evenly over the chicken.

Cover the chicken with the tomato sauce and Rotel, then place cover on baking dish, and place it in the oven. Bake at 375ºF for 50 minutes, remove, sprinkle with cheese, and bake uncovered for 10 more minutes, for a total of one hour bake time.

Remove, serve hot over pasta or with a side salad and broccoli.
