Apple-Raisin Cinnamon Scones

Ingredients

  • 2 cups all purpose flour
  • 1/4 cup sugar
  • 1/4 cup sugar substitute (Stevia)
  • 1 tsp no sodium baking powder (Hains Featherweight)
  • 1 tsp no sodium baking soda (need to double this amount if using EnerG)
  • 1/4 tsp cream of tartar
  • 1 tsp cinnamon
  • 1/2 cup cold, unsalted butter, cut into 1/2” pieces
  • 1/2 cup sour cream
  • 1 egg
  • 1 small Gala apple, peeled, cored, cut into 1/4” cubes
  • 1/2 cup golden raisins

Directions

1. Preheat oven to 350°F. Place baking stone in oven while it’s preheating.

2. In a large mixing bowl, mix dry ingredients (flours, sugar, baking powder & soda, cream of tarter, cinnamon)

3. Cut in cold butter, using fork or pastry cutter, until butter is pea sized

4. In a separate bowl, whisk egg and sour cream. Add to dry mix until just combined.

5. Add apple bits and stir until just combined

6. Place dough on lightly floured cutting board and knead a few times. Shape into a ball and flatten into a 1-1 1/2” disc. It will be around 8-9” in diameter. Cut into 8 pieces and place on pre-heated baking stone.

7. Bake for 15-20 minutes or until golden brown. Let cool on a wire rack.
