Ingredients

  • Eat immediately or freeze
  • This will make one sandwich, but you can make numerous sandwiches and freeze for later.
  • For one sandwich:
  • 1 English muffin, lightly toasted,
  • 1 baked egg (instructions below)
  • 1/4 oz cheddar cheese for each sandwich
  • 1 low sodium breakfast sausage or maple breakfast sausage- found on website, cooked

Directions:

Baked eggs- heat over to 350 degrees. Spray muffin tins, crack 1 egg into each cup, bake for 10-13 minutes. If freezing, then will cook a bit more when you serve them.

Place bottom of muffin on plate, top with cheese, then add egg and top of muffin.

Eat immediately or place one sandwich in the center of a large piece of plastic wrap. Fold wrap over, then twist the ends.

When using the frozen sandwiches, open the ends of the wrap— do not unwrap all the way, and then microwave on high for 90 seconds.
